This is how we did the roof insulation in the vaulted kitchen roof. 

We’re not experts — this is just what we did.

We cut down lengths of Knauf Insulation OmniFit so that it fit snuggly in the gaps we had in the roof. 
Popped them into place and then we had 62mm of Insulated plasterboard on top with airtightness tape to finish.
